In the cold season, friars used to add larger amount of malt. That’s a thought! So we added more malt. On second thought, we decided to add more ingredients. We boiled the beer wort with four Belgian hops: cara aroma, munich ii, cara munich, and pilsner. That’s not all: we matured this beer with slightly roasted french oak chips that enrich the beer with a special flavor, which may be imparted to wine as it ages in the oak barrel. This is a newly discovered coast in the sea of flavors. Up to complexity!
